Cinnamon Apple Pancakes
Yield: 10 pancakes
These cinnamon apple pancakes are so moist and delicious, you won’t even need to smother them in butter or maple syrup… But it couldn’t hurt to add a little!
1 medium-sized apple
1 1/4 cup flour
1 cup milk
2 tablespoons sugar
2 tablespoons baking powder
2 tablespoons vegetable oil
1/2 teaspoon ground cinnamon
Peel, core and dice apple into small pieces.
Mix all ingredients in a large bowl until well blended.
Preheat griddle on medium heat then drop batter using a quarter-cup sized measuring cup. This will ensure they all cook at the same rate.
Flip the pancakes once bubbles start to rise. About two minutes on each side, or until golden brown.
These cinnamon apple pancakes freeze well, so we always have a few extra on hand for a quick breakfast!
