Slow Cooker Pulled Pork
Yield: 6-8 servings
Enjoy this tender slow cooker pulled pork at the end of a long day. All it takes is about 15 minutes of prep, then you can set it and forget it, until it’s time to eat – that is!
1 3-5 pound pork butt
1 medium onion
2 tablespoons minced garlic
1/2 cup chicken broth
2 tablespoons brown sugar
1 tablespoon chili powder
1 tablespoon paprika
1 teaspoon salt & pepper
1 cup of your favorite BBQ sauce
Thinly slice onion and toss with minced garlic into the bottom of your slow cooker.
In a small bowl combine the brown sugar, chili powder, paprika, salt and pepper to create a dry rub.
Pat dry the pork butt, and work the dry rub over the surface of the meat.
Place the pork butt directly on top of the bed of onion and garlic.
Then pour chicken broth into the bottom of the slow cooker.
Cover and let slowly cook on low for about 8 hours, or until very tender.
Remove the pork from the slow cooker and shred with two forks.
Discard about half of the liquid before tossing the shredded pork back into the cooker.
After tossing the shredded pork back into the slow cooker, add a cup of your favorite BBQ sauce, and mix until the pork, onions, garlic and BBQ sauce are well blended.
Pile high atop a fresh, bulky roll and enjoy the tender, juiciness of a pulled pork sandwich!
For an added crunch, top with freshly made coleslaw!
