Ultimate Apple Crisp

Ultimate Apple Crisp

My favorite part of any apple crisp, is always the crispy, crumbly topping. So, I figured, why not sandwich the apple filling between two layers of crumb?

If you’ve got an excess of apples hanging around, say, from a recent apple picking adventure, it’s a great way to use up some of your apples!

Apple Filling
8-10 medium sized apples
3/4 cup white sugar
2 tablespoons melted butter
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Directions:

Peel, core, and thinly slice all the apples.

Toss together the apple slices, 3/4 cup white sugar, melted butter, cinnamon and nutmeg. Set aside.

Next, you’ll make the crumb topping (and bottom).

Crumb Topping
2 cups quick oats
2 cups brown sugar
2 cups flour
1 1/2 sticks cold butter, diced
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Directions:

Combine all dry ingredients in a large mixing bowl.

Next, dice 1 1/2 sticks of butter into small pieces. Make sure it is cold! Stick it in the freezer for a few minutes after dicing if it starts melting.

Toss the cold, diced butter into the dry ingredients and work together until the butter is evenly incorporated. It’s okay if large chunks of butter remain.

Evenly cover the bottom of a 9×13 baking pan with half of the crumb mixture. Fill with the apple mixture, and top with the remaining crumbs.

Bake at 375° for 45 minutes or until golden brown on top.

Top with whipped cream or serve with ice cream!
